Nicola is one of the oldest Friends of Pasta, one of the first to have agreed to participate in the project. Lucano DOC, he is an expert farmer and a great connoisseur of grains and land; his family has been cultivating Senatore Cappelli since 1907, even before the geneticist Strampelli gave it this name. He grows a large part of the wheat for us which we then transform into flour and together we have also begun a process of recovering some ancient grains and new varieties rich in proteins which we will soon transform into pasta.
